OK, so I'm thinking cook up some mince with a bit of beef or chicken stock if its too dry and add some peas and carrots for the filling.

But what about the casing?

I don't want to make thick pastry, I doubt that would be good for Cadders disgestion. I want something quite light, almost like filo pastry so that its only there to hold it together and the main treat is the mince. Any ideas folks?
