I am doing gundog training with my 11 month old German Pointer, its a bit different as he is a hunt, point retrieve (HPR) breed.
We've been at it for just over 5 months and its still mainly about obedience and steadiness. My breed love to hunt and are not so keen on the retrieving part so we have to be very careful not to overdo and bore the dog with that element at this point!! If I get one good retrieve to hand from Leo then we leave it at that for the time being - set them up to succeed!!
In my game bag I have two puppy dummies, a water dummy, a rabbit skin ball and a flinger - a flat square shaped thing with abit of rabbit skin! I've got a few bits to get Leo used to picking up different things and also to practice his "Hold"
I really enjoy it.

I have no idea about gundog work but I was bored the other night so started looking around the Internet. Someone else will be able to advise you but I found a gundog training forum, it's mainly for spaniels, but there a few labs on there and there's some videos in this link about teaching steadiness etc.
Like I said, the videos could be complete rubbish... But they may help
