Do you by any chance have a rather large garden ... the mention of cows/sheep/dogs made me wonder The reason I bring it up is, like others have mentioned, Bella would not go to the toilet when out on walks and she only started going when she was about 6 months old. She also always takes herself off into the long grass, possibly because she feels safer.
Anyway, if you do have a very large open garden, he may well be finding that a bit too daunting and scary to "go" in unless desperate.
If this is the case, you could section off a small area that can become his toilet area. All you would probably need are some of those garden edge wooden things (helpful I know but there are all sorts ). If he still refuses, it might be worth a try

I think the "wee zone" is a good idea. Maybe he is phased by the fact animals wander around. Even if they're not actually there he can still smell them. It would be his own little spot where he knew 100% that he wouldn't be disturbed. Mine stops his wee mid-flow if someone or something ventures into the 50 yard safety zone. Number Two's are different. He prefers am audience, the little beggar!
The singing sounds very sweet. Labs can be quite vocal, they sigh, sing, groan, bark, whine. I thank god I have never heard a howl yet....that would drive me nuts! I've even heard my friend's Labrador yodel. They all seem to be just expressions of enjoyment, or wanting more (crying/whining). My Labrador groans when having his ears scratched, sounds like Barry White.
If he was in pain, more likely he wouldn't make a sound, he'd try to hide it and possibly stop eating. Unless its a pain that comes with an injury, like a nettle sting or something like that. Then he might do a short sharp high-pitched whistle. There may come a time when he's teething when he refuses his dinner, at that point try softening food with water, but at the moment enjoy his singing as his way of saying "Thanks to the chef!"
