Have a look at this vid. Note how the spaniel is being encouraged to run from side to side in front of the handler, looking for rabbits. Occasionally stopping to investigate possible areas.

Every dog will naturally quarter on a scent, some will air scent others will ground scent, others a mixture of both.
The definition of quartering is open to debate, the action is to go sideways in a forward pattern. Whats wrong with a back flush?
The distance of the quarter is dependent on the breed the ground and whether its a competition. Trials seem to set the standard for trials
Its also dependent on the perceived pattern of natural quarter within a specific breed.
Labs are taught to take direction, therefore they can quarter, the dog ain't bothered if its looking for a retrieve or a flush, its systematically working ground under control and that is quartering but you choose when to bring it into play.
I f I'm sweeping after a drive, or looking for a lost dummy after a training session I quarter the dog.
But with a lab i do not quarter until its trained on the basics as you should not direct a dog on the move within training (generally)
