I'd try her on the Burns fish and rice Jules; Frank does really well either Fish and Rice or Pork and Potato but you may need to supplement it if she needs to put weight on...tripe is great. If you can't bear the stink of the fresh stuff (it's not for me ) then Butchers do a tinned tripe; mine love it.

I'm another HUGE raw Tripe fan here. Nothing like it for putting condition on a dog, cleaning their teeth, toughening their tummies (as it's full of the Good Bacteria stuff), plus it's already a balanced food .
As Sarah said though, no doubt once your girl has settled in, she will gain weight and condition without adding things to her diet.
