Pigs liver is a bit more calorific than lambs.

As well as lambs I also use chicken livers. I make three trays at a time, two lamb and one chicken then when I am cubing it ready for freezing I mix it all together so the bags are mixed.

I'm sure you'll be fine, I do it all in a food processor and there's not much smell really.
