Examine what YOU are doing Rachel. How fo you praise him? Are you maybe getting him a little excited? Just a thought. Praise should be calm and quiet or in the excitement he could forget what it is he is being praised for.
I agree quietly walk him away. It's a trick I often use. What I'm trying to do is break his thought pattern by giving him something else to think about. 30 seconds of concerted heelwork gets him thinking about something different.
Look for the trigger. At what point does it start? For example, is it the hand coming down to put him in the sit? try putting him in the sit a different way. Maybe it's simply the command "Stay"? Stop using it and just tell him to sit.
A problem is all about analysis. Think out the reason, because there is one! And you will have the answer.
