Sounds like things are coming along nicely. Definitely vary your command during training. If, for example, you always go for a down from a sit the dog can end up doing this automatically. You say “sit” the dog sits and a second later they go down without you asking them to because that’s what the dog is used to doing after a sit so keep them guessing as to what’s coming next. As for the stay whilst out of site, this is just a natural progression from the step back and stay you have been doing. To start with just disappear for a split second and increase the time slowly, this worked for us. Oh and we always went back to her to start with rather than calling her to us whilst out of site. This was to reinforce the stay to begin with. As for following commands whilst distracted, I could do with some help with on that too, lol.

Absolutely! Leo done his KC cit awards, and very soon Meg is about to begin her bronze. Commands are my business, it doesn't matter what commands i use, as long as the dog is responding and is clearly focusing on you.
Ages ago at a training class we attended when Leo was a pup, they INSISTED i use two different commands "stay" and "wait".... everyone followed, but i was the only one who asked "why use 2 different commands if the dogs doing exactly the same thing during both exercises??" All they could say mumble to me, in an annoyed tone was "it confuses your dog otherwise"
ERRRR No it does not! My pups have never been confused! They know that "stay" means exactly that. Sometimes i go back to them, sometimes i call them to me. As long as they stay in that spot or position when i say "stay" then thats all i expect, and thats the command obeyed. Whether i call them out of the stay or go clip the leash on them doesn't matter, the point is, they have done exactly as i have asked. I don't need a whole bunch of commands to achieve this.
There are times when i use 'wait' but its very informal and not a command as such. Like when i walk out of the livingroom and i don't want the dogs following me, i'll say "no sweeties, you two wait there"... not really a command, just a quick "mummy wil be back soon pups" sort of thing! Or if we are out on walks and i want to stop to take a picture, i'll say something like "wait a few secs pups"... just letting them know that i'll be stopping for a few mins but they are still free to wander about sort of thing and there are no commands or exercises expected of them, just as long as they are close-by me.
