Hiya Kay, Yes Mojo is very like the dog you described...She will shake in anticipation of a retrieve, sendaway, etc...and when learning something new her eyes are almost out of her head in eagerness. But her nervousness is very different to that. For example, she is really scared of most children (normally the screechy, non-doggy types), then she tries to get away from them. If she is off-lead she will run (usually round and round my legs) but if she is on-lead or cornered (as my delightful niece and nephew did the other day ) she will cower and shake and sometimes growl under her breath.
In the vets she does something very similar but has on occassions peed herself too. She has on odd occassions run up to people and barked too, which is what I find most disturbing. This has only happened when there has been no route of escape for her though, but it certainly isn't a behaviour I'm happy with.
I genuinely feel sorry for her as she tries her hardest to be everyones friend, but she is so sensitive that as soon as they make a false move (stare at her, bend over her, try to touch her, etc) she becomes a nervous wreck.
The odd thing is she is usually very good with women, most men too...it is just the odd adult she takes a dislike/distrust to.
I can sort of understand her not liking children as she did have an unfortunate experience with a couple of small relatives (the ones mentioned above) when she was about 5 months old (not that this would have worried a calmer dog), but I just don't understand why there are some people she avoids like the plague.

Jules, you are describing my Megan to a T (apart from the barking).... she was terified on children... but was never socialised with them... Adults would take 3 or 4 visits for her to feel 'comfortable' with, but after that she would be all over them... best friend and buddy syndrome... however she was very much a one person dog... she came everywhere with me.. her whole life... office, shopping, shower... she never left my side....
On the barking side of things.. I can honestly say, I have never heard Megan bark once in 9 years... she did exactly the opposite of Mojo.. she averted her eyes, stayed as still as possible and oh so very quiet...
It wasnt a behaviour that I was comfortable with either, but I learned to live with it and accept that was just how she was.. yes I did have to make certain adjustments specifically for her.. but she worked her little socks off for me... I cant ever recall her letting me down... her whole aim in life was simply to please me.. so, the adjustments weren't too much of a hardship for me

Thanks Kay....Yes I make "certain adjustments" as you put it, too.
Mojo is very much a one man (or in my case woman) dog too....Her ideal situation would be me and her on a desert island She bends over backwards to please me (that bit, I must admit, is wonderful) and rarely lets me down.
I guess you're right about her knowing things we don't too....she is a very intuitive dog (I've just been so used to living with the derr- brained, love everybody sort) . It's just that sometimes I get the feeling she is doing far too much thinking.
At the end of the day, if I lost the nervousness at the expense of her wonderful willing, eager, kind nature, she just wouldn't be my Mojo.
